In Vegas, we've only had a small sign of Fall (our highest temperature is now 95 degrees), but I immediately started to get into a hot meal kind-of mood. What meal says "Fall is coming" better than tomato soup? It was only a can of Campbell's, but I'm sharing this because of the tofu. Why add tofu to tomato soup? Well, why not? It was like having seasoned saltine crackers in my soup, except the tofu is more absorbent. The seasonings I put on the fried tofu were salt, pepper, and a little bit of ginger. Definitely a must-try!
